You walk past the Carindale food court expecting the usual mall Thai, and instead the room opens up: high ceilings, woven pendant lights, plants spilling over the dividers, and staff in shirts that read "where Thai flavour meets coastal soul." It is a proper sit-down room, not a counter with trays.
The plate that does the talking is the whole fried fish, the Pha Rad Prik, a barramundi fried crisp and buried under chilli, garlic and a sweet-and-sour tangle you break into with a spoon. Around it the table ran a seafood Thai paella heavy with prawns and mussels, a proper pad thai, and curries. Order the fish for the table and build out from there.
One thing worth knowing before you go: Haad Thai is on First Table, so you can get 50 percent off the food, but there is only one early slot a day and it books out fast. Gluten-free, vegetarian and vegan options are on the menu, and parking is free inside the centre.
